I just snuck a taste of this, waiting for Babs to get home from work, and it is actually better than I had expected.
The recipe is called ‘Crock Pot Black Bean Lentil Quinoa Chilli’ from Colorfulrecipes.
I was determined to find a meal using a slow cooker and that was hearty and meat-free. The lentils and quinoa in this recipe really won me over. I’m not sold on corn so I didn’t use any for this one, but I’m sure it would be tasty with it. I was surprised the chilli didn’t call for mushrooms. I went ahead and added portobello mushrooms and zucchini to the mix.
I liked the toppings suggestions. I opted for greek yogourt sprinkled with pepper. This was a filling chilli and I’m so glad it worked out! I will definitely hang on to this recipe for future use!
