Rosemary Lemon Chicken

We had plenty of rosemary leftover from my weekend of pot pies and I wanted to use it up. I scrolled through Food Gawker and found a chicken recipe that looked simple enough to put together on a rainy Sunday afternoon without creating a stack of dishes. And for some reason we had lemons…

We only had to pick up mushrooms and chicken to create this recipe. It was simple as ever and, paired with roasted potatoes/veggies, created a simple yet hearty meal with surprisingly great flavours.

Every time Babs is required to crush peppercorns with a mortar and pestle it reinforces his need to find the perfect pepper grinder. He’s open to suggestions!

But really, who can go wrong with a pepper/lemon base with chicken? Not to mention, mushrooms, garlic, rosemary!

I need to find out how to get that chicken skin crispy…
